At some level it must be possible but as a wheelbuild, you’d be signing up to a world of pain. The Zonda rim has G3 spoke grouping. How are you going to match the 14 driveside spokes expected by the rim to the 10 or 12 offered by the hub? And non-drive side, 7 rim holes but 10 or 12 hub holes? How on earth are you going to work out spoke lengths?
20-hole rims are in short supply and that’s a bit weedy for a rear wheel anyway. Get a 24h hub and select a nice 24h rim to go with it. Forget the Zonda. Lovely wheels but the build is highly proprietary.

This suggests that the ‘shelf
This suggests that the ‘shelf’ on the rim bed that the tubeless bead sits upon is not pronounced enough with your DT Swiss wheels, allowing the tyre bead to slide off when the tyre deflates. I have the same thing with a different pair of wheels. Leaving the tyre on for a longer period may allow the sealant to stick it to the rim as suggested above.
Tubeless is still evolving.

The main driver for 650B is
The main driver for 650B is to be able to fit a wider tyre than a 700 rim in the same bike would allow. Do you need wider than 40mm? Another factor to be aware of is that a 650B wheel makes your gearing slightly lower if you don’t put a huge tyre on it. That could be a positive of course. As for going tubeless, definitely do that.

Riding in loose sand is very difficult, it bogs you down instantly. Large volume with low pressure would be needed. Schwalbe do a 60mm wide G-One Speed explicitly for beach racing but that’s niche.

Back to back big mountain days are very draining so perhaps schedule some lower altitude riding.

Modern hydro brakes are better brakes than any other type. Argue all you like about home maintenance, squealing, weight, whatever, but you get more modulation and power with full hydro than any other solution.

What do you want anyone to say anyway? You watched the race coverage, make up your own mind. Former pro riders give a view from the peloton but the overall conclusions are usually obvious.

The Ridgeway is eminently do
The Ridgeway is eminently do-able on a CX bike. Be aware that it’s very, very rutted in the direction of travel so you need to pay attention to your line at all times. If it has been wet there can be epic mud. Trailbreak have a 100km event there on 3rd August.
