The OP didn’t say the wheel was rubbing the frame, I believe he meant to say that when he had *rim* brakes then an out of true wheel mean the brake track would rub the brake pad. With disc brakes and more generous clearance round the tyre, that doesn’t happen.
I don’t think a slight wheel out of trueness matters much, it’s more a question of whether it offends you or not. Always a good idea to ping the spokes to see if one has lost tension though.

Good advice for the valve nut
Good advice for the valve nut to be finger tight only. Out on the road, worst case is you may need to remove the valve and you won’t be able to do that if the nut is jammed on.

This. Every wheel I have is imbalanced when rotating freely with the bike in a stand. I can’t detect this imbalance when riding. You can put weights on the rim if this offends your OCD tendencies but that will only make your bike heavier for no benefit.

Yes, this is absolutely my experience of tubeless with rollers. My other observation that rollers accentuate rolling resistance differences between tyres. Two tyres that feel not much different on road can feel way different on rollers. I think that the generally small diameter of rollers puts a lot of flex into the tyre casing. So differences in casings show up as differences in resistance. The flexing also opens up any casing wounds that have been concealed by sealant.
So I don’t think it’s anything to do with sealant types. The solution is that tubeless tyres used on rollers need to be in good condition.

You should take your rebuilt wheels for a ride and see how they get on. They might just need to settle down.

I do a bit of gravel-type riding so am constantly meeting walkers, runners, horseriders etc. My experience with using a bell (Crane, single ping) is very good. I give it a ping when I’m a fair way back so when they look round, if they do, they have plenty of time to decide what to do. You can’t tank past peds at full velocity.

Disc pads seizing onto discs does not happen. What roadside maintenance are you expecting, I’ve not had to do any? Not saying discs don’t have their quirks but all the maintenance I’ve had to do has been in the comfort of my own home.

No offence but I don’t believe at all that open pro UST will only run hutch or Mavic tyres. There’s what the manufacturer says and what you can actually do.Same goes for tubeless valves in a kinlin asymmetric rim. I have a pair of wheels built with such rims and the valve is fine without any funny adapter.
But at a listed 430g I agree the open pro rim wall is not the strongest.

I don’t think pros use the small-small combination. That gear length is much better served by being on the big ring and mid-cluster on the rear. Big-big is useful, for example to get over the top of a rise when you know you’ll be changing up again soon, and Potenza handles that very well. As a long-time Campag user I agree that the chain will tinkle against the chainrings if you choose small-smallest or small-second smallest. It’s a feature, it reminds you to choose a better gear combination, lol. Campag EPS though, the front mech moves slightly to avoid chain rub in extreme combinations.
Honestly though I think you should rid yourself of the small-small habit, yet don’t be afraid of big-big.

I’d only bother doing
I’d only bother doing anything if the rotor is rubbing on a pad. If it’s quiet, leave it be. You could always take the pads out and turn them round at some point.
But maybe you’re lockdown bored and need something to do in which case go for it.

Hutchinson Fusion 5 all season tubeless, I’ve just done a second winter on the same pair with no flats at all despite a lot of km on wet and gritty roads. They ride very nicely and can be had for not that much dinero.
