    I find it hard to believe
    I find it hard to believe that a bike shop wouldn’t be able to order Fulcrum spares from I-ride for their customer.
    Unless… of course the bike wasn’t purchased from a local shop but from one of the online discounters.

    You have two problems:
    You have two problems:
    1. The system is well outside the capacity of the rear mech and shouldn’t be used as it is. Slack chain in some gears is asking for trouble…
    2. NO OTHER REAR MECH, new or old, will work with your shifters and 10sp cassette, as the 4700 groupset is an oddball (shifter pull is an 11sp equivalent). An 11sp rear mech would only work with a 11sp cassette with only 10 cogs available. The geometry of the older road and MTB mechs is different also.
    Personally I’d use smaller cassette and combine it w smaller large chainring, E.g. 11-40 and 44T in order to achieve a safe compromise.

    Perfectly doable. I’m in mid forties and currently commuting 42m round trip 6 times a week.
    Good reliable equipment is crucial; sensibly specced bike with proper full length mudguards, best clothes, powerful lights etc…

    What I find rude is walking,

    What I find rude is walking, cycling, running, playing with a dog etc… in the middle of a shared cycle path, while being completely oblivious of oher users and the world around.

    People offended by loud freehubs are idiots.

    30mm Strada Bianca on your
    30mm Strada Bianca on your rims measure about 31.5mm. The pressure you are running in such relatively high volume tyres kills comfort, traction/grip and speed.
    Personally at under 80kg I would never consider running them at more than 70PSI REAR and 60PSI FRONT, tops.

    Lots of throwback nonsense here. 

    I run 28mm tyres on 25mm INTERNAL rims. The bike corners like on rails. 

    Quite a number of road rims have internal width of about 20mm or more and 25mm tyres are a perfect match for that. Sidewalls are better supported so less pressure is possible for the same effective width. 

    Don’t be stuck in the ETRTO matrix world, people.

    he nonsense about lighter wheels making a big difference will be repeated forever regardless of how much independent evidence to the contrary is available. 

    It’s been the same with narrower tyres or higher pressure being faster, stiffer frames being more “efficient”, road pedals transfering power “more effectively” etc etc… All based on errr… feel firm beliefs and scraps of often valid but incomplete or irrelevant data taken out of a wider context. 

     

    P.S. I must say though the Earth felt so flat when I was cycling to work this morning.

    Crossed or not, many modern bikes suffer from poor shifting with standard ss inners. Even when indexed correctly, they are far from smooth and operate on a tiny margin of error. As it varies from one setup to another,  your Tiagra 4700, which BTW comes originally with Optislick inners…, may work better than the OP’s 105 which still doesn’t change the wider picture.

    There is a good reason why Shimano started offerring high end inner gear wires;-)

    Under the tape (vanity)

    Under the tape (vanity) routing will always have more friction and many (not all) 10sp+ setups won’t index correctly or will feel “wooly” with standard gear wires, even on new bikes (based on often frustrating workshop experience).

    You may need Shimano Optislick or even better Polymer coated wires to get it to work smoothly.

    You’ll be still accelerating nearly 100kg of flesh, metal, water etc… 300g isn’t going to make any difference and even if it does (in your head) you’ll get used to it within first couple of rides.

    The MAX pressure limit for

    The MAX pressure limit for your rims is 80PSI for a 28mm tyre. Bear in mind that 28mm Schwalbe Pros on a 25mm internal hookless rims like yours will effectively measure 33mm or more in width. Running such wide tyres at 80PSI IMO reduces the safety margin to the minimum but also won’t offer you ANY performance advantages, quite the opposite.
