I haven't ridden many different manufacturers bikes so can't comment on the Giant compared with the Cannondale.

Although the step-up from the 105 on my Aluxx Defy 1 to the Ultegra on my Composite Defy Advanced 1, I understand that Shimano have massively improved the 105 this year and so the quality gap between 105 and Ultegra has been greatly reduced, with weight apparently now the only real difference.
All the best with your decision. If able, perhaps ride the two and see which you like the best?
