“Helmets are uncool, but so are things like Bouyancy aids for sailing and watersports, HiViz for horse riding, hard hats for rock climbing, masks for sanding..”
    All similar in principle
I don’t wear a helmet climbing unless it’s a mountain crag with lots of ledges and loose rock or somewhere where I feel someone else may lob a rock over. I don’t wear a BA paddling in a canadian but did on white water where rocks are about. I don’t wear high viz except commuting on my m/c in busy traffic. These things are, thank god, not yet compulsory or standard.
The chap who said he had been cyclng for 40 years does have a point. If that lorry wants you he will get you but experience helps you know when to pull over and when to get in the way.
Its up to the individual and to say otherwise in the big deal here..

I didn’t think SRAM offered the option of a triple front shifter, what with their super low double set up etc. I might be wrong of course. Never used their suff so don’t knw what the left/front shifter does.

I did just that. Always used cantis on CX bikes and as the entire world recommended V’s I swapped for some mini’s. They seemed fine at first but really loose the power when they bare worn and you have had to shorten the cable. You can adjust cantis a lot more before you ditch the blocks. Also unhooking the V noodle is akward if the blocks are close to the rim.
See Sheldon Brown for advice on setting cantis. Also CTC forum

I have given up being annoyed
I have given up being annoyed or even disbelieving.
It is not just cyclist. The number of T**** who passed me yesterday morning is crazy. I was in the car, on a stretch of road well known for der and boar crossings. It was dark and I felt that at 40ish I was going too fast to definitly stop if some thing walked out in front of me. Yet I ws passed time and time again ina 3 mile stretch by cars that then closed up behind another vehicle that blocked their daft driving for 3 or 4 miles. they gained a good 10 seconds. It is just that so many people want to rush. I have mates that go everywhere on the speed limit rather than the 10 below that I do. I pointed out once that their 25 mile commute was about 3 minutes longer than mine and a lot more expensive.Do they change? Nope.
I reckon the issue with club runs is that a group is hard to overtake as it strings out. A tractor at the same speed is short and also hard to kill. Many drivers are scared of their skill levels and over react. Many are just ill mannered tossers who should crash and burn.

Try the CTC forum. They are much more geared up to this sort of thing over there.
For what its worth though, it will work fine with an 8 speed cassette. Spacings on the cassette are 4.7mm for Shimano and 5.0 mm for Campag.
I have used that combo for many bikes. My current “roughstuff” bike is running a elderly 105 rear mech with even older Record 8 speed shifter. Fine. The fact that the left shifter will shift in small steps will help the front trim if its needed. I bung a variety of chainsets on and all I do is adjust the stops on the front mech to suit.
As you are all but committed to your set up anyway just buy a cassette of your chice. Get a cheapy. Be careful about the capacity of the rear mech but most Sora stuff I see seems happy with anything other than a whopping big 34 rear.
I am guessing you are going double at the front so you won’t have a big difference there.
If it doesn’t work perfectly look for shiftmates.
SJSC are good for that sort of thing.
Many people say that it will get sloppy when it ages. I think it improves as a touch of play in the chain more than makes up for the 0.2 mm differences in cassette spacing.
To be honest 8 speed mixes work fine.

    Just dangling the plate won’t
Just dangling the plate won’t do. It won’t be illuminated.
If you want it correct you cannot have the lights obscured in anyway. This includes any reflectors, number plate lights or reversing lights. I suppose failiure to have a less than perfect system might give the idiot who drives into you a good argument with the insurance companies.
Despite this I fit mine high enough for the plate to show and make sure that the lights can be seen through the spokes with no frame bits in the way.

Dunno about the pedals but I suspect some one above has made a good suggestion. Cheap Shimano mtb spds’s. Shoes can be walked in and very easy release. Much easier than clips. And it will become second nature.

    I doubt there are many
I doubt there are many worthwhile cobbled sections of roads left. Why not bring the bike across the river. Many of the graveled tracks in the Forest of Dean have got large stones as a base. As the gravel has worn away over the years you can find long stretches of solid but rough rock. Riding them is definitly an aquired taste and skill on a road/cx bike.
