I think you found a lovely bicycle there, I’d be tempted to ride it for retro joy and have it for the next l’eroica brittania, whenever it might be.
You just need to start getting the retro outfit next.
You might find it difficult to mate it with more modern components, thinking about getting more modern wheels. Old freewheel, new freehub, perhaps.

I may be a bit too late, but it’s just popped into my head, there are several companies, BTwin and Weldite, there may be others, who have a “emergency tyre inflator” in a can, with sealent and ‘”air”, enough to pressure a tyre. Don’t know if that would help.

If you have a good relationship with your LBS, they will have a few different stems sitting about in their workshop, try a few, see what feels best, before you buy the one you really want.
Alternately, buy a cheap second hand one on ebay to see if it feels good, before you invest in the pricey one.

Ooohh, dynaplug ends. Ive had the little bit that Mavic put over the join in their rims come loose, inside the rim. At speed no noise, only when the going gets slow do the move about and make noise. Dribbleing in a bit of superglue stopped it.

Tyres are always a good thing
Tyres are always a good thing to upgrade.
And not really about performance, but you will notice a big difference in contact points, handlebars and tape, saddle and pedals. And these are often the parts manufacturers make savings on too.
The groupset, upgrade as it wears or breaks. Though fresh quality cables will feel fabulous and work really well.

I have noticed-
A lack of helmets, and gloves. And Hi Viz. Or badly worn helmets and brand new clean Hi Viz. Still no gloves. Very little happy medium.
Overdressing when a bit warm, which will be followed by underdressing when cold and wet.
Noisy chains. For what must have been weeks now, the noise must be driving them mad.
No shoulder checking or hearing noisy little me, until I greet. They might learn as the traffic increases, as it has.
A lot of classic early 90s MTBs, with canti brakes, which I know require near perfect set up to be any good, I’m guessing they have awful brakes. And probably gears.
But they do all seem happy.
Good to be out and the weather has been lovely.
I do wonder how many of them will get beyond the sore arse phase?

It probably isn’t, but is never a bad idea to do regularly anyway, but clean and grease (or carbonny stuff if it’s that way) your seatpost. Even if it’s not the source of the noise it will stop it binding and destroying your soul.

I went and checked some tables because I didn’t think there would be enough gas in a large CO2 thingy, but a 20g and my tank at 200psi both gets my 27.5×3 to 21 and 20 psi, respectively.
My tank is a lot of effort to pump anywhere near 200psi, but is wonderful to use (Topeak Turbibooster X) but it did take me 3 goes to get the last tyre to seat, needed more dilute washing up liquid and a bit of a clogged valve. I can however attach, flick the lever and run away, the pop terrifies me.

My tubeless set up holds air
My tubeless set up holds air better than my latex tubes, I can go at least a week (or more) without needing topping up, the latex tubes needed it 2-3 times a week. Lower pressure mind.
I have pulled at least 20 thorns from each of my hardpack summer tyres in less than a year, the majority would have been massivly inconvenient or ride enjoyment destroying changes of tube, some requiring multiples and repairing. Got to use an anchovie on a wet day. It is incredibly satisfying to pull out a huge thorn and watch the hole seal. And the smuggness felt continuing the ride.
I find getting the bead away from the rim seal to be an absolute nightmare, and dread having to do it trailside (hopefully never needed, but I do carry a tube, got to be prepared).
I like Orange Endurance Seal gunk, LBS set everything up, I stick in a bit every few months, but after about a year the contents of the rear had snotted up, but I still hadn’t experienced loss of pressure. The front still had some liquid left in it, hadn’t been as long.
My valves have clogged but I have cleaned them out. I decided to buy a Topeak TurbiBoster X pressure tank and am glad I did.
I will never stop using tubes/going ghetto tubeless on my old bikes, but I am very pleased that I decided to go tubeless on my new bike.

Strange, when the roads really are as empty as the adverts tend to show.
