If the single hole you're referring to is the one on the brake bridge then racks which have a 'bed' (rather than just a frame) often have holes for a single fixing strap to connect to the brake bridge - see pic.
How much do you want to carry? There are lots of good seatpost-only racks out there that are rated for 10kg.
I have an Ortlieb Quick Rack that I'm very happy with, I also bought the mudguard you can fit to it.

Can you use something like the Zefal Gizmo III Bottle Cage Mount - basically bottle cage mounts on cable ties - or 'P' clamps to create the mount points?
I've seen things like this, which look like it would work.

Yes, these seat post collars with the rack mount points are really good. I saw someone at work with one, and then was able to use it to fit a rack to my partner's bike. Then you just get to use a normal rack.
Agreed, they work well. Given its an aluminium frame I'd go with that and P-clips on the seat stays to support the rack legs.
