Have the adverts taught you nothing? What she really wants is a Peloton bike.
Get one that fits her perfectly as you'll still be able to ride it (though not very well as it'll be too small and I doubt that the saddle will go high enough to compensate). When she becomes a MTB fanatic, turn round and say that you need to get your own bike now.
But you won't be able to ride with her if you've only got one bike - ?!
Or maybe you need something more like https://swishcycles.co.uk/product/lapierre_tandem_vtt/
I have a road bike, this one is for her to ride with me now and again and me to rideto work when weather is bad!
