Based on where I am in Spain at the moment, I've been looking at the Strava segments and then seeing the routes the locals have been taking.
Thanks all that's really helpful. We are staying on the MA-10 just West of Soller. I've created these 2 routes starting/ending at our villa based on your advice, just need to work out the other one.

I stay in Port Soller and if your wife loves you as I am sure she does she will voluntear to pick you up from the roundabout at the top of Andraxt after you have done the coast road MA - 10 starting in Soller, you can go inland through Galilea and Puigpuntent back to Soller area but its 80 odd miles https://ridewithgps.com/trips/15273861

Count on 1000ft for every 10 miles. The Puig and Sa colobra climbs you will need to dig in but the others are forgiving. Compact and 11-28 will get you up all. If doing Sa Colobra get there early as the coaches will start to bring the tourists in and out about 11.00am. A great little climb is the road down to Port Valdemossa and back up. Nice cafe at bottom.

Just a thought but would the good lady be receptive to meeting you for a spot of lunch and taking you back in the car? I have a friend that did this a few years back and it worked out quite well.
Remember that getting out of Soller in any direction is a climb so you are always going to be riding slow miles to start.
I would suggest Puig Major and Sa Calobra in one out and back ride. Two big climbs and another tester on the backside of the Puig past the lakes. You can refuel at the viaduct cafe.
Another ride would be out of Soller to Bunyola, down to Santa Maria and pick up the 'cami de muro' until it intersects the ma-3120 then head north to Inca. A quick bite to eat in the town then continue north to Selva & Caimari. Do the Col de sa Batalla, enjoy the rollers to the viaduct and go past the lakes. Climb the back side of the Puig and enjoy the descent home.
If you can get a pass for a big day then pick up a local train from Santa Maria to Muro and then start riding to Pollenca to do the Femenia, turn right after Lluc and head towards the viaduct again, all getting a bit repetitive though.
Personally i would fore-go the Femenia and head north west from Soller to Deia on one day. This coastline has some spectacular views which more that make up for the lack of big climbs, although there are some testing ramps. Loop round to Valldemossa and then Bunyola and climb the south side of the Col de Soller.
As alreay mentioned doing the Col d Honor from Bunyola in to the Orient Valley is also a treat as this area really is a hidden oasis. Loop back through Alaro to Bunyola and head back to Soller.

Definitely drive to Formentor - its a big slog over the spine around Lluc to get there otherwise - and then you've got to do exactly the same on the way home.
Roads are pretty narrow in places and its peak tourist season so expect lots of coaches - hopefully not an issue if you're out at sunrise. The locals will be familiar with cyclists but don't forget you'll have a ton of Brits there in hire cars. No reason to assume their driving standards will be improved by 30 degree heat and multo cervezas
Thanks for that, reasonably fot, although have been comparatively lazy this year, and exclusively UK-based (Dartmoor/Exmoor/Lakes/Skye/Bealach na Ba).
Main reason for avoiding whoppers is to preserve marital harmony by not disappearing for the whole day. Head out at sunrise and get back late morning/early lunch, that kind of thing.
Have a car so can drive to route start if need be (eg Formentor).
All depends on how fot you are.
I'd do col de soller, bunyola, Orient (good climb) , up Sa Batalla, and then either left and back to Soller, or go and do a loop around sa Colabra.
I'd also just go, Puig Major, Pollensa, cap Formentor and back in a session...ticked the lot off in two rides.
Although... that second ride is a whopper...
I'd also look at some of the flatter rides to the monastries, Randa and stuff.... great climbs, but not all day in the hills.
