I've booked an Orbea Orca through https://www.mallorcabikehire.com for a few days mid-Oct. Only issue seems to be their carbon wheel upgrades cost more to hire than the bike! They get good reviews though...decent prices, seem to be run by Brits so no language issues and they deliver to your accommodation within the cost.
I've used Pro Bike Hire in Puerto Pollensa before and they were good, but they didn't seem to have anything I fancied in my size for the dates i wanted this time around.
You can rent a Pinarello from the imaginatively named Pinarello Experience not too far away in Port de Pollensa. Taxi over, ride it back!
I had a Gan S last year which was brilliant, or go mad and get a Dogma.
