Really, Tony Corke is the guy to go and see in the South West, or at least talk to before deciding. I've not met every fitter of course so I can't say he's the 'best' and others may use similar techniques but I would say that his experience is first class and he understands bike ergonomics more than anyone that relies on fitting formulas, lots of measurements or branded systems.
This chap was highly recommended to me in Frome; http://www.organicmotioncycling.co.uk/
Having just bought a new wet/winter bike (2016 Giant Defy Disc 1) to compliment m best/summer bike (2015 Giant Defy Advanced 1) I have to wait a few months to save the pennies. I'll then be booking both bikes to be done at the same time.
If you have a services background, they also offer 20% discount.

Live 2 Ride in Frome do bike fitting (bikefitzone - Trek related). A friend of mine was living down there for a while and really rated them. Only been in there once mid ride but they were v helpful and sorted one of our group with a new saddle and stem while we waited. Sort of bike fit 'on the go'.
BW cycling in Bristol worked great for me and my back problems. Heavily recommended on here and other forums and reasonably priced (<£100)
