I have an old trek madone and I am looking to give it a good service over winter and also replace the chain set to something faster.

Currently it is
Ultegra 6750 172.5mm 10 speed

Front is ultegra sg x 50f / 34f
Rear is 105 cs5700. 12 / 25

I ideally want a 52 / 36 for the front and 11 /28 for the rear.

I am having trouble finding the correct set up I want for an old set up, and I was wondering if anyone could help or suggest an alternative set up that would work for a good price!

Tiagra is 10 speed chainset, available in 52/36 (currently £94 for 172.5mm at Halfrauds online). Or you could just replace the chainrings with another pair of 52t and 36t 10 speed ones provided the no. of arms and BCD was the same.

You might be able to find a 5700 11-28 cassette but the 12-28 or 12-30 Tiagra HG500 should be fine – 52×12 is still a pretty big gear. The only difference between the 28 and 30 is in the 3 lowest ratios.

Last time I checked SRAM PG-1050 / PG-1070 were available in 11-28 as well as 12-26, 12-27 and 12-28. Sunrace also have a CSRS0 10 speed 11-28 cassette (their 9 speed cassettes work just as well as Shimano for me so I’d be happy to use that).
