105 5700 Setup Issues

Hi All. Fairly competent at bike maintenance but every time I change the cables and housing on my 105 5700 groupset I find it a real pain to setup properly. I can get it working but never seemingly perfectly. Shifting is a never quite smooth and I find the odd gear jump. Again, well versed in setting up bikes. Recently got told 105 was a pain in the arse to setup by a lbs mechanic, just wondered if anyone else had similar issues or advice?

No issues here. Both 5700
No issues here. Both 5700 and 6700.

How often do you need to change cables?? Surely not more than once a year?

What bit of the set up is not quite right? Gear indexing? Sticky cables? Shifting up the block? Shifting down the block?

I assume cassette and chain are still within good wear limits, and gear hanger straight.
