I am looking at giant defy but not sure about the verstility of them. I did look into CX bikes but lots of people said they felt dull on the road which is where i will ride mostly.
Hmmm, not my experience personally, my Ridley is perfectly spritely and will really dart around if you let it. That being said, I'm not sure how much the bigger sizes will change this (I'm on a 50cm). I don't use mine to ride CX much, but it does allow you to go pretty much anywhere should you want, which means it's a great commuter as you're not limited to road - it can do cycle paths, across fields, all over the shop
Decathon's BTwin bikes are low cost but good.
If frame only, what about planet x or Ribble?
Have you considered a used Cyclo-Cross bike? I got my CX bike (for commuting originally) for £250 used, and have since upgraded wheels and bits and bobs but it was fundamentally a great fun all-rounder right from the off. I know it's a cliche, but they really are properly versatile and really good fun to boot!
