Cycling UK's magazine had a Q&A article in a recent issue. Suggestions included Sonder Camino flat bar (like this) and a Whyte. This one on the CUK website looks like it - https://www.cyclinguk.org/cycle-magazine/bike-finder-which-small-light-b...
And another similar one about flat bars - https://www.cyclinguk.org/cycle-magazine/bike-finder-which-onoff-road-al...

Depending on usage and how deep your pockets are, Subway AWE (which got a decent review on this site), Planet X London Road / Bootzipper, Giant Toughroad, Boardman Hybrid (especially if you can find one of the old ones second hand), Specialized Sirrus, Whyte Portobello, Marin DSX. That should give you some food for thought.
I saw what looked like a Trek carbon frame with flat bars and a short travel fork today. Bloke was going too fast to ask him what it was. Really skinny suspension fork
What was the geometry - MTB, road or gravel? I've been looking at mountain bikes recently, including a titanium one with lots of Hope and XT kit (very very shiny). But can't justify it as it would just do what my current bikes do, but slower.
Thanks for your reply. I have a boardman cyclo-cross and a voodoo bizango - both a few years old. I want to replace both bikes with the one bike. Keen on a flat bar gravel bike - don't like drop down bars - that delivers good performance on the road as well as trail....
I think it was probably this - Trek Dual Sport. And it was ally, not carbon.

I'd say any decent hybrid commuter bike would have sufficient clearance for 40mm tyres. Alternatively how about a hardtail MTB?
I have a Giant Escape Disc 1 and have added SPDs, G-Ones and bottle cages and it's brilliant.
