Been to rhodes several times on holiday and always used a company called www.getactiverhodes.com Great bikes and the guys knew the island like the back of there hand. variety of riding including mountainous and coastal. no shortage of big climbs (10-15k) with gradients of up to 20%.

I took my road bike to Rhodes last summer and can thoroughly recommend it. The roads are smooth and, depending where you are on the island, virtually traffic free.
We stayed in Pefkos. I was heading out about 6am every other day and spent my time cycling around the south of the island, and managed to find a couple of garages along the route to refill the bottles!
I like cycling on tarmac Rhodes !
I tried TrekkingHellas Rhodes this August while in Rhodes. Trustworthy and deep knowledge. They offer support vehicle to transfer your stuff so you can enjoy the ride. They offer six different bike tours, a mix of asphalt rural roads and gravel roads. Really enjoyable tours while you really meet locals. Almost private tours, maximum 8 people. They offer hiking tours as well but I did not join. I got them via www.trekking.gr and Google.
If it is for Rhodes Greece, try www.rhodesroads.com and www.facebook.com/RhodesRoads. They rent specialized mtb and offer mtb tours on daily basis. Had a great time with them. Champion cyclist in team.
