Pertex windshell vs breatheable waterproof

Rode 150m yesterday (200km Audax plus home and back) mostly in subzero temperatures, but found my torso getting uncomfortably sweaty.

Legs OK (DHB Roubaix tights), fingers were toasty (SealSkinz gloves with merino inner), feet were chilled but bearable (thinnish ski socks + neoprene overshoes), but couldn't get the right combination of windproofing and ventilation on my top half: baselayer+ Specialized winter jersey with Montane Velocity EntrantDT waterpoof. There wasn't enough breathing/airflow over my back so it was constantly damp meaning I chilled down quickly at every stop. The Entrant fabric is one of the most breatheable and is well vented at the front.

Anyone have experience of a similar combination and tried switching to a Windstopper jersey or a Pertex/nylon windproof?

I test an awful lot of gear in my job and for the most part this winter on my top half I have been wearing LS merino base layers, sportwool jersey (winter weight) and a gilet… when the temp really dropped I topped of with a pertex shell… I run hot and have found I get too hot in winter jackets…

Until it got cold enough for my windproof fleece I wore Submerino base layer and a gilet under my windshirt. Gilet keeps the wind off while ventilating my back better than a typical mid layer.

i always go for a windstopper softshell (Gore one in my case) over a waterproof as a w'proof is meant to keep water out, therefore i reckon the you'll not get the 'breathe-ability' as a non w'proof i spose, but it does mean taking a waterproof with you if it looks like rain.
