Got a very reasonably priced Giant TCR from Bike Island Mallorca which was perfect for those hills:

Really friendly service, would use them again.
Two consequetive experiences with Mallorca Bike Hire, both very positive:

Had Orbea Orcas both last year and this. Drop off, bike set up and collection all good. Seem nice people too.
Have also used Pro Cycle Hire in the past, but didn't always have the bikes I'd prebooked available. Another rider said the same to me when I was out in Pollenca in September. That said, they made a different size bike fit ok, and were very flexible on collection and drop off times so i could max out the riding.
I've also used Mallorca bike hire, couldn't fault the Supersix I had but a friend had issues with the crank on his Orca. We had to return it and they were pretty grumpy about it.
I hired a Bianchi Intenso with Ultegra from a bike rental shop based in my hotel this year. You don't have to stay there to hire from them and it was quite a bit cheaper than the shop-based alternatives, yet I couldn't fault the service. Go to https://www.bimontbikehire.com/bikes
They do more expensive options but I thought the Intenso was a great bike (although I'd have preferred Campag...)
Had a good experience with https://2gocycling.com in Puerto Pollensa a couple of years ago...
