I’ve used one quite satisfactorily with one of the newer derailleurs and 50-34 on the front. Gives all the gear range you need and some. You may need a spacer to fit an 11 speed shimano mtb cassette on a road hub.
The Wolftooth works fine but you need to adjust inner and outer cable lengths which means it is too much of a faff to change cassettes to match the ride.
Certainly try the Wolf tooth. Just be aware that the teeth jump up in twos/threes on the 11-40 cass.
The range is with a 11-40 cass 50/34 is almost the same on the lowest gearing, but has bigger top end compared to my earlier suggestion.
Buy the XT version, cheaper than XTR

@CXR94Di2 : You're suggesting something closer to my idea, except making it easier by replacing the whole crankset.
@Tones0000: that would still leave us with an 11/28 cassette which we'll have to replace in any case. Also my wife quite enjoys the occasional sprint on the flat or downhill. Would 46/11 mean she'll be spinning out..?
Keeping in mind that I'm trying to get her the best bang for the buck, what do you guys think of the Wolf's Tooth TANPAN + an "mtb" rear derailleur and an 11/40 cassette (and keep the 50/34 the seller has on the bike)?
Can you hold out for Shimano GRX which is coming onto the market now? You just need to switch the crankset and front derailleur to get 46-30 chainrings and still be able to use a decent bb. You can switch cassettes and rear derailleur later as well if needed.
Get the Adventure crank from FSA, it comes with 48/32 or 46/30. Get the larger crank and change the inner ring for 30t.

Look at using a SHIMANO 105 R7000 11-SPEED REAR DERAILLEUR GS which has a capacity upto 34t officially, but with its 'B' screw adjusted, you could use Sram PG 1170 11-36 11 speed. That will help massively for climbing mountains

I love altering standard gearing to suit the requirements. I have a triple Di2 front derailleur that Shimano say it will fit up 42t chainring. Im using 48t outer ring all the way down to 26t granny ring and it works perfectly.
