Does anyone know whether a 52/34 ratio with these chainrings is possible, is the jump too big, or should I stick with the 52/36 ratio as per the standard chainrings?

    Thanks in advance

You will not have a chain

You will not have a chain issue going from to 52 to 34, the issue you will face is the ramps not always catching the chain going up to the big ring from 34 to 52.

I have run this set up

I have run this set up regularly when I have gone somewhere with big climbs and fast descents. I have Di2 shifting which manages the changes well. Usually run 52/36 but do like the 34 when I know there will be a lot of climbing.

    Ring Velotech in Stratford on

Ring Velotech in Stratford on Avon, they will know. Pretty sure you can do it (on a 110 bcd spider).
