single speed/ fixed gear fixi commuter in Manchester mid price, with pannier

I've tried a charge plug 1 £350 in size L from Tredz but found the cantilever front brake juddered when used, i also would prefer riser bars to the drop ones on it; it came in at a good 10kg. I tried a raleigh (i think propaganda) for approximately £450 but wasn't to keen on the ride or the weight. An ultimate cro-mo fixi from Harry Hall was a good price under £300, though i only tried it fixi; it weighed a respectable 11.2kg. I then tried a frankenbike from Cycle Logic; unfortunately i didnt gel with the track style bars-they custom build so at £600 you can get a SS to fit you. Finally the best test ride i've been on so far is on a Biachi Semplice sale £300; weighs 10.4kg size 530mm-however I was underwhelmed buy its ride.
Can you recommend a SS for me please?-what are your experiences with SS/Fixi bikes? I'd like a ride that has pannier rack mount eyelets ideally- but as my dad says- thats not the point of its simplicity.

I have a Genesis flyer for wet weather and a bit of training (up to 30miles) in my Cornish hilly lanes. Full mudguards, pannier mounts, and in the cherrybomb I have, oh so beautiful. Around the 10kilo mark. I only ride it SS rather than fixed, but it is really good fun and very comfortable.
