Touring advice and the joy of riding all day, every day

Hi all - looking for some advice on a cycle tour in either Switzerland (or Italy, close to the Alps). Want to travel without bike and hire when I get over there. Anybody done this? Any recommended routes or must do's for a first time visitor? I'm also considering Ireland for a tour - anyone been? West coast the best? What about elsewhere? What's the best tour you've ever done?
