You Tube training videos on iPhone, connected to TV with HDMI. No subtitles

I'm hoping somebody a bit more tech savvy than me can help. I've started doing some training videos on the turbo, I'm playing them from the YouTube app on my iPhone and connecting it to the TV with an HDMI cable. I'm a bit deaf and the turbo is a bit noisy, so I really need to have the subtitles on. Sometimes I can see the subtitles on the TV screen, sometimes I can't. I cannot for the life of me work out what I'm doing differently each time. I don't think it's a settings issue with either the YouTube app on the iPhone, I think it might be the order in which I connect things and turn them on. Does anybody know the answer?
