Spring training camp. Recommendations?

As part of getting myself psyched up to ‘have a go’ at racing next year, I plan to book myself on some sort of pre season ‘holiday’ (as far as my Wife’s concerned). I’m thinking somewhere warm but not too expensive, and ideally I’d like someone else to plan the routes and stuff so I can feel a bit pro for the week. I’m aware that there’s lots of companies that run foreign camps, but I’m also aware that anyone can start up a business arranging training camps. Anyone got some actual ‘been there’ recommendations?
