    Hoping to upgrade to 1×12 GRX but from what I can make out to get my preferred 165mm length involves a ‘downgrade’ to the 600-series?

    Yes, Shimano don’t seem to have realised the benefits of shorter cranks. SRAM has XPLR cranks down to 160mm. 
    You could check out 3rd party 1x cranksets from Hope, Rotor and others
