New Bike Purchase Gravel or Road

Looking at purchasing a new bike with budget up to £1,000.
Currently have a mountain bike with hybrid tyres for pootling about on canal and through local parks on bridal ways etc. Also an old Scott S2 road bike which i use on roads.
I want to buy a new bike and cannot decide whether to go pure road or gravel.
I would say i do 70% tarmac but do like routes along canal tow paths, local woods etc which are gravel based. Not big into real offroading just like the odd detour.
Gravel bike worth it or not??

Gravel/adventure bike 100%. It will do 98% of what your both your other bikes can.
when you can get a set of 650b wheels for gravel fun and a 700c set for faster road. Or if on a budget a 30c+ 700c tyres.

Thanks that was kind of my thoughts but wanted some advice from those that know.

Gonna purchase with 700c road tyres. What size would you recommend on the 650 knobbly tyres.
